Banana Bread


This is my favorite Banana Bread recipe, adapted from the {Lion House Recipes} cookbook. 
You'll need:

1/2 cup butter, softened
1 cup sugar
2 eggs
2 over ripe bananas, mashed
1/4 cup milk
1 tsp lemon juice
2 cups flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt


In a mixer, cream your butter and sugar.  Add the eggs, milk and lemon juice and mix.  Next, mix in the mashed bananas.


Add in the baking powder, soda and salt.  Finally, sift in your flour.  Important to sift in the flour.  It gives you a fluffier bread.  I use this great wire colander to sift flour.  Now mix the batter until all blended. 


Spray your baking pan with an oil cooking spray. Pour in your batter.  (I had a lot of ripe bananas, so I'm doubling the recipe.  Normally, you'll get one loaf.  If you have the bananas, make that second loaf and freeze it for another week!) 


Bake at 350° for about an hour.  Insert a toothpick to make sure center is cooked. Tops will be nicely browned.  



Let cool in the pan for about 15 minutes.  Then take out of pan and finish cooling on a wire rack.  Delicious!
