Family Pancake



Family pancakes are a breakfast treat from my childhood. I can remember my mom making them and now I make them for my own family. With Mother's Day coming up, this dish would make the perfect addition to a mommy honoring breakfast or brunch. And, it is so easy that dad and the kids can make it for you!

Family Pancake

1/4 cup butter
2 eggs
1/2 cup flour
1/2 cup milk

Preheat oven to 425 degrees. 

Cut your stick of butter in half which makes 1/4 cup. Place your butter in the middle of a pie dish and place in the oven to melt. 


While your butter is melting in the oven, whisk together the eggs, flour and milk. 
Leave a little lumpy. 


Once your butter is melted, pull pie dish from oven. 


Pour your batter in the middle of your pie dish. Be sure not to smooth your batter to dish edges or stir it. Just pour the batter and leave it alone. 



Place pie dish back in oven and bake for 15 to 20 minutes. When the baking is done, your family pancake will look like this - crispy, bubbly goodness with the edges baked up the sides of the dish. 


As soon as you pull it from the oven, squeeze half a lemon all over the top. The lemon gives the pancake a burst of freshness. 


Finally, cut your pancake as if it was a pizza. Serve up slices and garnish with fresh berries, powder sugar, orange marmalade (my mom's favorite), whip cream, chocolate sauce or any other jams or jellies. In fact, you can make it like a crepe bar and serve a variety of toppings for people to personalize their family pancake slice.
