Fried Rice


What to do with your left over Easter ham?  
Make some fried rice.  This is an easy recipe that my kids love!  You'll need:

4 cups cooked rice
1 package frozen oriental vegetables or various cut vegetables
4 green onions, chopped
1 package fried rice seasoning
2 cups chopped ham
soy sauce
5 eggs
olive oil

There are a couple key things to do to make a great fried rice. 
First, cook up your rice and pour it out on a cutting board or in a 9x13 dish to cool.


If you try to cook with it while hot, it will get mushy. 
 By letting it cool first, the rice grains will cook up nicely in your recipe and not stick together. 
For this recipe, most often I'll thaw out a frozen bag of oriental cut or fried rice style veggies. 
 Or use your favorite fresh vegetables.  
Cook your veggies until just tender.   
I had corn, peas, water chestnuts, mushrooms, carrots, red pepper and green onion. I also like to use broccoli and zucchini.  What ever you have on hand will work. 
I'm using 2 cups of chopped ham, but chicken and shrimp work well too.  I even will make it vegetarian style with no meat. (Shrimp is actually my favorite.) 
Prep all your veggies and set aside.


Put your eggs in a bowl with 1 Tbsp soy sauce and mix. 

I like using an electric fry pan because it gives a large surface to cook up all the fried rice.  Heat it to  300°  and add 2 Tbsp olive oil.  Cook your eggs.  Wash out the bowl you were using and after the eggs cook, put them back in the bowl and set aside. 



Put about 4 Tbsp oil in the fry pan and add your rice.  Cook with a spatula, turning occasionally for about 8 minutes.  


Second key to making a great fried rice, is using a seasoning mix. 
 I usually use Sun-bird and recently have tried Kikkoman.  Like them both.  


Sprinkle the mix over the rice and pour about 4 Tbsp of soy sauce on top. 
 Mix it into the rice with your spatula. Keep turning your rice and cook for 10 more minutes.


  
Then add all your veggies, onion and ham. Mix and continue cooking. 



After about 5 minutes, add the eggs. 


You're done!  Looks delicious! 




This is a family favorite.  
The kids like to have the left overs packed up and put in their school lunches for the next day.
