Creamy Ham Potato Soup

With the colder weather rolling in
it's time for soup!
This is one of my kid's favorites.

2 1/2 cup chicken broth
2 1/2 cup water
7 potatoes, peeled and cubed
1 small onion, diced fine
1 cup ham, cubed
6 Tbsp butter
6 Tbsp flour
2 cups half and half
1 cup cheddar cheese
1/2 cup Parmesan cheese
1/2 tsp salt
1/8 tsp pepper
1/2 tsp celery seed

Put your potatoes, onion, water and broth in a large pot and cook until tender.
While that is cooking, in another pot, melt your butter.  Add the flour and whisk.  Add the half and  half and the salt, pepper and celery seed.  Cook until thickened.  Pour in the cheese and stir until melted.  Pour this cheesy sauce into the cooked potato mixture.   Add in the ham.  Stir and keep cooking until the soup thickens.

Ready for a warm bowl of soup!
